Ingredients

1/2 cup pure maple syrup *
1/4 cup canola oil
1 egg
1 tsp vanilla extract
1 banana, chopped
2 Tbs coconut oil
3 cups nut flour [Bob's Red Mill Almond Meal]
1 tsp baking soda
pinch of salt
1/2 cup of chopped dates
1/2 cup dried cherries (or any other dried fruit)
1/2 cup dairy free chocolate [Enjoy Life Mini Chips]
Tips
*Must be pure maple syrup, not the imitation kind with corn syrup. If no access to 100% pure maple syrup, use honey instead.
Directions
Preheat oven to 350 degrees F
Oil a 9x13 baking dish
Mix all ingredients well in a bowl with a spatula until all the dry ingredients are moistened
Pour batter into the baking dish and spread into an even layer along the bottom of the dish
Bake for 25-28 minutes until edges are lightly browned and when a knife inserted into the center comes out clean
Allow to cool in the dish for 30 minutes. Cut into bars!
Store bars in a sealed container in refrigerator
