Ingredients

    18 oz. boneless, skinless chicken breasts, cooked and cut into 1" pieces
    1 T olive oil
    1 large onion, diced
    3 cloves garlic, minced or pressed
    1 32 oz. can whole tomatoes with juice
    2 cans diced tomatoes with green chilis
    2 cans light and fat free chicken broth
    1 can black beans, rinsed and drained
    1 can sweet corn, rinsed and drained
    juice of 1 fresh lime
    1 tsp. cumin
    1/2 tsp. sugar
    1/4 cup chopped cilantro, or more to taste


Directions

Put olive oil in a large pot with the chopped onion. Saute until softened then add garlic for a minute. Add all other ingredients, except cilantro, bring to a boil then lower heat and cook for 15 minutes. Add cilantro and continue to simmer for another 15 minutes.

Serve with: grated cheese, chopped avocado, tortilla chips or strips of tortilla. (Extras not included in calorie counts.)

**I usually marinate my chicken in the McCormicks Chipotle Pepper or Baja Citrus marinade then cook it on my grill.

Makes 12 one and a half cup servings.
