Ingredients
-
1lb flank steak
1tsp sriracha hot sauce
2tsp honey
1/2 TBS low-sodium soy sauce
juice of 1 lime
1/4C canola oil
1 bag salad
1 pint cherry tomatoes, halved
1/2 small red onion, sliced
1/2 English cucumber, thinly sliced
1 avocado, peeled, pitted, and chopped
salt and pepper
Tips
If using left over beef, warm in the oven at 325 for about 10 min and add to salad. Works great without tomatoes or avocadoes also!
Directions
1. Preheat a grill, grill pan, or cast-iron skillet over med-hi heat. Season steak all over with salt and pepper and cook until medium rare, about 3-4 minutes per side. Allow the steak to rest at least 5 minutes before slicing thinly across the grain.
2. While the meat rests, combine the sriracha, honey, soy sauce, and lime juice with a pinch of pepper in a mixing bowl. Slowly drizzle in the oil, whisking to combine.
3. In a large salad bowl, combine the salad, tomatoes, onion, cucumber, avocado and sliced steak. Slowly drizzle in the dressing, tossing the ingredients gently, until everything is lightly coated. Top with a little fresh cilantro if desired.
