A surprisingly healthy and easy-to-make old-fashioned favourite!!! A surprisingly healthy and easy-to-make old-fashioned favourite!!!
Number of Servings: 6


    1 quart milk (I use re-constituted non-fat milk powder)
    1/4 cup sugar
    1/4 cup uncooked brown rice
    1/2 teaspoon salt
    1 teaspoon vanilla
    1/8 teaspoon nutmeg
    1 tbsp cinnamon
    1 cup raisins


Mix all the ingredients together and put in a casserole. Bake, uncovered, for 3 hours in a 300 degrees F oven.

During the first hour, stir the pudding every 20 minutes.

Serves 6

  • This is like an old family recipe from my Aunt. It makes a creamy pudding that is worth the time. I stir every 1/2 hour or so, double recipe,& add a pinch of cardamon as well.Have used silk almond cashew milk & swerve sugar replacement, 1/4 cup raisins. Gets to 113 calorie per 1/2 cup.Made 3 cups - 2/19/17
