Introduction

Ingredients

1 quart milk (I use re-constituted non-fat milk powder)
1/4 cup sugar
1/4 cup uncooked brown rice
1/2 teaspoon salt
1 teaspoon vanilla
1/8 teaspoon nutmeg
1 tbsp cinnamon
1 cup raisins
Directions
Mix all the ingredients together and put in a casserole. Bake, uncovered, for 3 hours in a 300 degrees F oven.
During the first hour, stir the pudding every 20 minutes.
Serves 6

This is like an old family recipe from my Aunt. It makes a creamy pudding that is worth the time. I stir every 1/2 hour or so, double recipe,& add a pinch of cardamon as well.Have used silk almond cashew milk & swerve sugar replacement, 1/4 cup raisins. Gets to 113 calorie per 1/2 cup.Made 3 cups - 2/19/17

Haven't eaten any yet. It's now been in the oven 4 hours. Doesn't look anywhere near done.
Also cut cinnamon in 1/2 & am so glad I did. All I can smell is cinnamon & it's floating around on the milk mixture. I hope it turns eventually into a pudding and that I don't end up with a sweet rice soup - 7/5/20
