Ingredients

1 cup 1% milk
1 packet active dry yeast
3 TB brown sugar
2 TB light butter, melted
1 1/4 cup all-purpose flour
1 cup white whole wheat flour
1 tsp fine salt
1/6 cup baking soda
1 1/2 cup warm water
Coarse sea or kosher salt
2-4 TB light butter, melted (optional)
*1 tsp + 1/4 cup sugar, mixed (optional)
Directions
1. Warm milk in microwave, 1-1 1/2 minutes. 110 degrees. Stir in yeast and let sit 3 minutes.
2. Add melted butter and brown sugar. Add flour, 1 cup at a time. Add salt. Knead 10 minutes.
3. Place in greased bowl and cover with greased saran wrap. Set in warm place and let rise for 1 hour.
4. Preheat oven - 450 degrees. Line baking sheet with parchment paper.
5. Divide dough into 6-8 lumps (depending on desired size of pretzels). Roll into thin snakes (the thinner, the crispier - the thicker, the fluffier). Form into pretzel shapes.
6. Mix baking soda and warm water. Dip pretzels. Place onto baking sheet. Sprinkle with coarse salt.
7. Bake 7-11 minutes, until browned.
8. Dip in melted butter (if desired). Cool on wire rack.
9. *For cinnamon/sugar pretzels - dip in mixture after butter.
