Number of Servings: 4

Ingredients

    1 pork tenderloin (about a pound)
    6 TBS olive oil
    5 cloves garlic

    3 TBS smoked paprika
    1 TBS cumin
    ! TBS dried oregano
    S &P



Tips

Cooking time depends on size of tenderloin.


Directions

Heat olive oil and add chopped garlic until it releases its scent. Add dried oregano and heat another minute. take off flame and stir in rest of spices, then let cool.

Spread oil and spice mixture all over tenderloin and put in nonreactive container in fridge. Let marinate for 24-48 hours.

Remove and let come to room temp.

Can be cooked on grill or in oven (350, cover if it gets too dark) Let rest before serving.
