Introduction

Ingredients

2 Cups fat-free, low-sodium chicken broth
2 medium red potatoes, washed and cubed
1 small can yellow sweet corn, drained
2 cups unsweetened almond milk
12 slices pre-cooked turkey bacon, cut into pieces
1 1/2 Cups cut-up chicken pieces
Salt & pepper to taste
Tips
I don't personally like onions, so I didn't include them in the recipe. You could add them in with the potatoes if you'd like.
I also added a bit of parmesan cheese to flavor it up a little bit more.
Directions
Add chicken broth and potatoes to a pot and bring to a boil.
Simmer until potatoes are tender.
Add corn and almond milk
Using stick/immersion blender, briefly puree potatoes and corn until desired texture is reached.
Add bacon and chicken.
Continue over medium heat to thicken soup slightly and heat meat through.
Serve as desired.
Serving Size: Makes 4 to 5 2-cup servings
