Ingredients

    2 Cups - Bitter Melon/Bitter Gourd, skin removed, sliced horizontally
    1/2 Cup - Onions, Sliced
    2/3 Cup - Stewed Tomatoes
    2 Tbsp - Olive Oil,
    1 Tsp - Salt,
    1/8 Tsp - Cayenne Pepper
    1/2 Tsp - Mango Powder (Amchoor) - at Indian Stores
    1/2 Tsp - Coriander Powder (Dhania Powder) Indian Store

    Medium Pan with a lid.

Directions

Heat oil in pan over medium heat, saute bitter melon slices for 5 minutes or till they start browning slightly. Add the onion slices and saute together till onions start becoming soft.
Add the stewed tomatoes and the dry ingredients. Cover and simmer on medium-low heat till the bitter melon is soft and there is no liquid from the tomatoes remaining in the pan.
Serve hot.
