Ingredients

    1 teaspoon vegetable oil
    1 onion, chopped
    3 cloves garlic, peeled and minced
    1.5 cup uncooked quinoa
    3 cups vegetable broth, preferably low-sodium
    2 teaspoon ground cumin
    1/2 teaspoon cayenne pepper
    salt and pepper to taste (I personally left out the salt)
    1 cup frozen corn kernels
    2 (15 ounce) cans black beans, rinsed and drained
    1/2 cup chopped fresh cilantro

Directions

Saute onion and garlic in oil over medium heat until lightly browned. Add the seasonings and quinoa and cook according to package directions. Replacing the water with the vegetable broth. Five minutes before the end of cooking time, add the corn. When done, add the black beans and cilantro and toss gently to combine.
