Ingredients

    1 pie crust (homemade or refrigerated; unbaked)
    2 baking apples, thinly sliced (no more than 1/4" thick)
    2 medium yellow onions
    3/4 cup shredded cheddar cheese
    1 Tbsp. olive oil
    pinch of salt; pepper to taste

Tips

- deglaze caramelizing onions with balsamic vinegar for extra flavor


Directions

0. preheat oven to 350F/175C.
1. slice apples; chop onions.
2. caramelize onions in skillet, ~30 minutes, with salt and olive oil (or butter)
3. line tart pan, shallow round baking dish (~9" in diameter) or pie dish with pie crust
4. arrange apple slices in dish
5. cover apples with cheese (this becomes the "glue" to bind apples and onions)
6. spread onions over cheese; added pepper
7. bake until apples are done and crust browns, 20-35 minutes.
