Introduction

I adapted this from a recipe I found on Three Many Cooks, and for which I got many thumbs up. I added the chicken breast and beans . . . you could add only beans and make it vegetarian; you could also increase the veggies in your meal by serving it over fresh chopped spinach. Ingredients

    6 c cooked whole wheat pasta (about 1 13-oz box)
    2 large cucumbers, peeled and diced (about 3 c)
    2 boxes cherry or grape tomatoes, halved (about 3 c)
    1 c crumbled feta cheese
    1 can whole black olives, sliced in quarters lengthwise
    1 can kidney beans, drained and rinsed
    1 large chicken breast, sliced small
    red onion, sliced thin (optional)
    2 t dried oregano
    1/2 c extra virgin olive oil
    3 T red wine vinegar
    Salt and ground black pepper to taste

Directions

Place pasta, cucumber, tomatoes, feta, olives, beans, chicken, onion and oregano in a large bowl. Add oil; toss to coat. Add vinegar; toss to coat. Add salt and pepper; toss and serve
