Introduction

Not very healthy but nice and yummy to have once in a while. Not very healthy but nice and yummy to have once in a while.

Ingredients

    1lb lean ground beef
    1 can (16oz) refried beans
    1 jar salsa (16oz)
    1 pkg taco seasoning
    2 1/2 cups tortilla chips coarsley broken
    1/2 medium green bell pepper
    4 green onions sliced
    2 medium tomatoes, chopped
    1 cup shredded cheese
    1/4 cup sliced olives
    1 cup shredded lettuce

Tips

You could cut back on a ton with this recipe by using turkey instead of beef. Fat free beans would help also. You could also use low sodium taco seasoning.


Directions

1. Heat oven to 350 F. In 12in skillet, cook beef over medium high heat 5-7 minutes, stiring occasionally, until thoroughly cooked; drain. Stir in refried beens, salsa and taco seasoning mix. Reduce heat to medium. Heat to boiling, stiring occasionally.
2.In ungreased 2quart casserole, place 2 cups of the broken tortilla chips. Top evenly with beef mixture. Sprinkle with bell peppers, onions, 1 cup tomato, cheese, and olives.
3. Bake uncovered 20-30 minutes or until hot and bubbly and cheese is melted. Top baked casserole with lettuce, remaining tomatoes and remaining tortilla chips.
