Ingredients

    1 Tbsp. canola oil
    1 large onion, chopped
    1 green pepper, seeded and chopped
    2 cloves garlic, minced
    2 Tbsp. chili powder
    1 Tbsp. dried oregano
    2 tsp. ground cumin
    1/2 tsp. sea salt
    1 bay leaf
    1 (28 oz.)can no-salt diced tomatoes
    1 (14oz.)can low-fat low-sodium chicken broth
    14 oz. water
    1 (15oz.)can black beans, rinsed and drained
    1 (15oz.)can great northern beans, rinsed and drained
    1 (15oz.)can dark red kidney beans, rinsed and drained
    1/3 c. uncooked couscous



Directions

Heat oil in a large stockpot over medium-high heat. Add onion, green pepper, and garlic and saute for 2 minutes. Add herbs, spices and salt to pan; stir well to coat vegetables. Add tomatoes, broth, water, and beans. Bring mixture to a boil. Reduce heat and simmer uncovered for 5 minutes. Add couscous and continue to simmer uncovered for 5 more minutes. Discard bay leaf and serve.

    Incredible!
    I made a similar recipe and it was awsome. The only difference being that you just dump everything in a crock pot but the couscous (add in the last half hour) and omit the oil. Cook for 4-5 hours. One of my favorites. - 4/11/11
