Ingredients

    1/2 Cup Kielbasa, finely chopped
    1 Cup Green Pepper, finely chopped
    1 Onion, finely chopped
    8 Eggs, lightly beaten
    4 Cups Frozen Hash brown potatoes
    1 Cup Cottage Cheese, 1% Milkfat
    1 Cup Swiss Cheese, shredded



Directions

1. In a large skillet, at low heat, cook chopped kielbasa, green pepper and onion until the onion is transparent.

2. In a separate dish, mix together the remaining ingredients. Then add kielbasa mixture.

3. Spray a 9" x 13" pan with Pam.

4. Pour egg mixture into pan.

5. Bake uncovered at 350 degrees for 40 minutes until eggs are set.

6. Let stand for ten minutes before serving.

Makes twelve servings.
