Introduction

On a hot summer day, there's nothing like fresh Salsa and guacamole with tortilla chips. This version is low in sodium as well in calories - and my family gobbles can't get enough of it. Ingredients

    2-3 Ripe Roma Tomatoes, diced
    1 Medium Onion, diced
    2-3 Garlic Cloves, minced
    1 Tbls of Fresh Cilantro, chopped
    1 tsp of Fresh Lime Juice
    1 Tbls of V8 Tomatoe Juice, Low Sodium
    Salt and Pepper to taste

Tips

Although, this is good served as is, i've also been known to add green chilies or a cut up jalepeno to the mix for some added kick.


Directions

Prep all ingredients as listed. Mix all ingredients in a large bowl. Serve immediately.

Serving Size: Makes roughly 2 to 3 cups of salsa for sharing
