Introduction

Ingredients

    Salad:
    -2 c cooked Forbidden (black) Rice (you can get this in the bulk bins at Whole Foods) - cook per directions.
    -3 small oranges, peeled, seeded, and sliced small
    -30 almonds

    Dressing:
    -1/2 c lite coconut milk (room temperature)
    -1/4 c orange juice
    -2 t cinnamon (or to taste)

Tips

Can sub wild rice for Forbidden (black) Rice, but Forbidden Rice has a distinct natural sweet, nutty flavor that adds to the flavor of the dish.


Directions

Prepare rice per directions, and allow to cool.

In a small bowl, combine cooled rice, the prepared oranges, and 30 almonds.

In a separate small bowl, combine coconut milk, OJ, and cinnamon. Using a whisk (electronic or hand), whisk vigorously until well-combined and "fluffy".

Pour dressing over rice mixture. Toss together. Refrigerate 1-2 hours or overnight for a delicious, vegan, full-flavor salad!
