Introduction

A remake of a Low Sodium recipe from Robert Logue - this time it's Gluten Free as well as low sodium. Original recipe called for Pepperoni - changed it for grilled chicken and used Gluten Free Pasta. Ingredients

    8oz (1/2 of a Bag) of Trader Joe's Organic Gluten Free Brown Rice Penne or similar.
    3oz (13) Grape Tomatoes - cut in half lenthwise
    1 cup of Baby Portabello Mushrooms (or Button Mushrooms - depends on preference) sliced.
    1 cup Green Bell Pepper - diced
    2oz Swiss Cheese - cut into "sticks" or diced.
    2 Chicken Breasts, grilled and cut into bite-sized pieces

    Dressing:
    1/3 cup Fat Free/Low Sodium Italian Salad Dressing (Vinegarette)

Tips

This is fantastic as a main course served with a slice of low sodium garlic bread.


Directions

Grill, bake or cut up and pan fry your chicken breasts until no longer pink. If grilling: heat grill to 500 degrees, place seasoned chicken on grill away from direct heat and turn temp to low. Walk away from it for 10 minutes, return to the grill, turn chicken and continue to cook until no longer pink. If Baking: place chicken breasts into a preheated 350 degree oven and bake for approx 35 minutes.

While chicken is grilling/cooking, prepare pasta according to package directions. Drain, rinse with cold water and set aside.

Prep the vegetables and cheese.

Once chicken is done, cut into bite size pieces.

Combine pasta, chicken, vegetables, cheese and dressing in bowl and serve.
