Number of Servings: 5

Ingredients

    1 14.5 oz can vegetable broth
    1 15.5 oz can pinto beans (rinsed and drained)
    1 15.5 oz can whole kernel corn (drained)
    2 cups fresh salsa (mild or medium) [Publix deli salsa]
    1/4 cup chopped scallions
    1 tbsp canned chopped green chilies
    1/2 Haas avocado - diced (optional)

Directions

Combine all ingredients except avocado in medium pot over medium heat. Heat 10 minutes to blend flavors. Dice 1/2 Haas avocado and place in soup bowl. Ladle 1 cup of soup over avocado and enjoy!!
