Ingredients

    1/2 c black beans, drained and rinsed
    1/4 c corn
    1/2 cup salsa
    2 c broccoli
    1 sweet potato (medium, skin removed)
    1 c shredded lettuce
    1 corn tortilla
    Sriracha (or other hot sauce) to taste

Tips

Adjust sodium by purchasing low-sodium beans (and rinsing them well), using low-sodium salsa and low-sodium tortillas. Also, be aware of the hot sauce sodium content.


Directions

Steam broccoli (if desired). Bake sweet potato, or microwave for 5 minutes (poking holes in it to vent, wrap in paper towel). Cut the sweet potato into slices or cubes. Combine black beans, salsa, corn and hot sauce in a small pot and heat over medium-low (if desired). Once heated, add broccoli and sweet potato. Drizzle with hot sauce and top with crisped, crumbled tortilla.
