Introduction
My kids, who are not lovers of alternative food, like these cookies a lot. They are buttery, not too sweet, a touch of peanut butter, really good with or without chocolate chips! Ingredients

2 1/2 cups almond flour (plus a tablespoon or 2 more if needed, to get texture just right)
1/2 tsp sea salt
1/2 tsp baking soda
1/3 cup peanut butter
1/2 cup butter
1/2 cup agave nectar
1 Tbsp vanilla extract
chocolate chips, optional (not included in nutrition info)
Tips
I recommend buying your almond flour for this recipe from nuts.com. It's finer ground and works much better for this kind of recipe than the kind you can buy at Whole Foods.
Directions
Preheat oven to 350F Line baking sheets with parchment paper. In large bowl, combine dry ingredients. In smaller bowl, combine wet ingredients and mix until blended. Add to dry ingredients and mix well. Add chocolate chips if desired. Drop by tablespoons onto cookie sheets. Or roll into 1" balls, then flatten with a fork, to make them look like peanut butter cookies. Bake 8-11 minutes until lightly golden. Cookies are fluffy on top when they come out. Cool for 15-20 minutes to let them set.
