Introduction

Ingredients

    1 Tbl olive oil
    5 sqaush, trim off ends and cut squash into large pieces (calabacita, zuchinni, summer or any combo)
    1 to 1 1/2 red onion, cut into large pieces (sixths)
    2 pounds lean pork loin, cut into stew meat chunks
    30 oz. homemade tomatillo salsa (recipe is shared!)
    2 tsp. Adams dry minced roasted garlic
    3/4 cup water (approx)



Tips

NOTE: Serve over brown rice if you like; you can also add corn to this stew if you like. A handful of grated 2% sharp cheddar cheese is really good on top of the stew! Just be sure to adjust your nutrition counts if you add any of these ingredients.


Directions

Heat olive oil in dutch oven over medium heat.
Cut onion and squash into chunks; add to dutch oven. Saute until onion just begins to get translucent.
Add remaining ingredients. Bring to a boil, lower heat, then simmer for up to 1 1/2 hours or until meat is done and squash is cooked to your liking.




Serving Size: Makes about 6 servings
