Ingredients

2 C celery
2 C carrots
3 C green cabbage
1 C onion
4 oz cooked ground turkey (93% lean)
2 tsp grated ginger
1 clove minced garlic
2 T soy sauce
1/4 tsp pepper
12 (7") egg roll wrappers
1 egg white
Tips
Serve with dipping sauce and steamed veggies.
Directions
Preheat the oven to 425. Spray a cookie sheet with nonstick spray, set aside.
Combine celery, carrot, onion and cabbage in a food processor and puls until finely chopped. Squeeze excess liquid from the veggies, set aside.
Brown ground turkey over medium heat for 5 minutes. Add ginger and garlic and cook 1 minute more. Add veggies and pepper and saute another 2 minutes. Remove from heat and stir in the soy sauce.
To assemble the rolls place a wrapper so that there is an edge pointing towards you (a diamond shape). Spoon 1/4 C filling onto the middle of each wrapper. Brush the top corner of the wrapper with egg white. Fold in the sides, then roll up and place seam side down on the cookie sheet. Spray the rolls lightly with cooking spray. Bake 15-20 minutes or until lightly browned.
