Ingredients

    2 Large Onions
    2 Garlic Cloves
    1-2 Small Red chillis
    500g Sweet Potato Chopped
    500g Carrots Chopped
    1.2ltrs / 2 pints / 4 cups Vege Stock
    Salt n pepper to taste

Directions

1. Stir fry the onions and garlic untill soft and golden. Add a little water if ness to stop sticking.
2. Stir in the chillies then add sweet potatoes and carrots. Cover all the ingredients with the stock bring to the boil.
3. Cover and simmer for 20mins or untill the veges are tender
4. Liquidise the soup, return to the pan season to taste and adjust the consistancy with water is required

    This is lovely - I found that it made either 4 huge portions or 5 decent sized ones. A great meal for so few calories. - 2/2/13
