Ingredients

    for pancakes:
    1/4 cup rolled oats
    1/4 cup white whole wheat flour (or whole wheat pastry)
    3/4 tsp baking powder
    dash salt
    pinch baking soda
    dash of cinnamon
    dash of truvia/stevia
    1 tbsp vanilla whey protein powder i.e. jay robb
    2 tbsp liquid egg whites
    2 tbsp unsweetened carob chips
    1/3 cup unsweetened almond milk

    for syrup:
    1 tbsp sugar-free maple syrup (I use Walden Farms)
    1 tbsp all-natural carob powder
    1 1/2 tbsp water

Directions

In a medium-sized bowl whisk together oats, flour, baking powder, baking soda, salt, protein powder, cinnamon and sweetener. Then whisk in egg whites, milk, and fold in carob chips.
Preheat small griddle to medium heat and cook pancakes, 1/4 cup batter each, one at a time, flipping after 1-2 minutes when bubbly and edges are firm. Continue cooking until both sides are lightly browned.

To make syrup, whisk together maple syrup, carob powder and water until all clumps are gone. Serve drizzled over pancakes.

Serving Size: makes 2 servings, 2 pancakes and 1.5tbsp syrup each
