Introduction

Needed quick dinner and I had all of this stuff in the fridge/garden. Needed quick dinner and I had all of this stuff in the fridge/garden.

Ingredients

    Olive Oil, 1 tbsp (remove)
    Onions, raw, 1 medium, sliced thin
    Fresh Oregano, 5 stalks
    Bell Peppers, sweet, red, fresh, 1 medium, chopped
    Zucchini, 1 large, sliced
    *Balsamic Vinegar, 2 tbsp (remove)
    Previously grilled Chicken Breast, 2, sliced
    Fresh Chives, 1 handful

Tips

Good with rice or pasta. The family had it with grated parmesan on top.


Directions

Saute onion & oregano in olive oil until the onion begins to brown. Add peppers, and zucchini. When they begin to soften, add the balsamic vinegar and chicken and a little bit of water. Cover and simmer until the chicken is heated through, then add the chives at the last minute.
