Introduction

These have been a hit wherever I take them. Its breakfast in the palm of your hand! Pancakes, eggs, sausage, cheese, and delicious maple syrup...all in a delicious muffin, with no sticky mess! Perfect to be made ahead of time for a quick breakfast on the go, especially for those busy school days! These have been a hit wherever I take them. Its breakfast in the palm of your hand! Ingredients

    Pancake Batter:
    3 cups all-purpose flour
    7 tsp baking powder
    2 tsp salt
    2 tbs sugar (white)
    1 stick salted butter, melted
    2-1/2 cups non-fat milk
    2 eggs, beaten
    2 tbs maple syrup

    Filling:
    i package (16 oz) sausage
    5 eggs, beaten
    6 slices american cheese
    2 tbs maple syrup
    2 tbs non-fat milk






Tips

** I am putting together a much lower calorie/fat version of this, and will be posting soon, once it passes "testing". ;) I hope you love the recipe as much as we do!


Directions

For batter, mix dry ingredients together, then add eggs, milk, maple syrup and melted butter. Mix well with fork until most of the lumps are out.

Cook and drain sausage, being sure to chop up well. Mix maple syrup into sausage to coat. Add milk to beaten eggs and cook (i usually do mine in the microwave) Make sure scrambled eggs are finely chopped.

Spray muffin pans with non-stick spray, and add 1 tablespoon batter to the bottom of each cup. Add 1 tablespoon of sausage and egg on top of batter (divide any remaining sausage/egg between muffins)

Divide each slice of American cheese into fourths. Place one piece into each cup on top of the sausage and egg. Fill each muffin cup with 2 tbs of batter, being sure to cover the fillings.

Bake at 375 for 15-18 minutes, or until tops are lightly golden. ENJOY!

(You can also use bacon or ham in this recipe, but sausage has been the overall favorite, so that's what I am sharing!)
