Ingredients

56.69 grams of onion
56.69 grams of green bell pepper
2 medium tomatoes
2.25 cups of Rotini
3 tbsp balsamic vinegar
4 cloves fresh garlic
10 jumbo black olives
2 tbsp olive oil
Directions
Put the pasta on to boil. Get your veggies out and cut them up. You can do the vegetables two different ways, either add them fresh to the pasta or use 1 tsp of the olive oil and saute the peppers and onions and about half the garlic. set the veggies to the side and mix the vinegar and the remainder of the oil in a bowl.
Drain the pasta and plate put in the sauted veggies and the fresh tomatoes and the rest of the garlic. Instead of dicing the olives just kind of crush them between your fingers, it gives the dish a better texture in my opinion. Toss in the oil and vinegar and enjoy! Makes 3 hearty servings.
