Ingredients

    6 T olive oil
    1 lb tilapia fillets
    1 T sea salt
    1 t pepper
    1 haas avocado, 1/2" cubes
    1 mango, 1/2" cubes
    2 T chopped cilantro
    3 scallions chopped
    1 T lime juice
    1 c sour cream
    2 T dry mustard
    2 c baby arugula chopped
    8 6" corn tortillas

Directions

In lg skillet heat 3 T oil over med heat. Drizzle fish w/ 1 T oil, sprinkle w/ 2 t salt & pepper. Add fish to skillet, cook through, 2-3 min each side.
In a bowl combine avocado, mango, cilantro, scallions & arugula. In separate bowl whisk 2 T oil, lime juice & 1 t salt. Drizzle over avocado mixture, toss to coat.
Combine sour cream & mustard.
Warm the tortillas.
Divide fish & avocado mixture evenly between the tortillas, top w/ sour cream mixture
