Ingredients

    14 oz. package of soft tofu
    1 large cucumber
    1/4 large onion, raw
    1/2 clove of garlic
    2.5 oz (or 1/2 c.) lemon juice
    1-2 tbsp Greek seasoning
    1-2 tbsp dried dill weed
    1 tsp cayenne powder

Tips

Meal ideas:
Serve over chopped chunks of cucumber.
Use as a chip dip.
Spread on cucumber finger sandwiches.
Mix into a slaw.
Serve as a topping on a baked potato.


Directions

1. Peel cucumber. Cut in half lengthwise. Use a spoon to scoop out all of the seeds. (If you leave the seeds in, the sauce will be VERY watery.)

2. Combine all ingredients in a food processor (or Magic Bullet) for about 30 seconds.

3. Chill. Serve.

*Refrigerate leftovers.
