Ingredients

2 tbsp canola oil
400 gms lean beef cubed
3 large green peppers (bell peppers),roughly chopped
1 medium onion, chopped
2 medium tomatoes, chopped
4 cloves garlic, crushed
2 tsp fresh ginger root, crushed
2 tsp ground coriander
1/2 tsp red or cayenne pepper
1 tsp ground turmeric
1 tsp salt
3 cups water
Tips
Serve with basmati rice, naan or roti. Can be cooked in a slow cooker or pressure cooker as well.
Directions
1. Chop all vegetables and crush garlic and ginger.
2. Heat oil in a deep pan and brown onions.
3. Add garlic and ginger. Brown until slightly sticking to the pan.
4. Add tomatoes and all seasonings. Simmer until all ingredients are soft. Add a few tablespoons of water if necessary.
5. Add beef cubes and mix well. Add about 1/2 cup of water and simmer until liquid is gone.
6. Add the rest of the water and the green peppers, cover and cook about 20 minutes. Meat should be tender and the peppers should yield to a fork but not be too soft.
Serving Size: Makes 6 One cup servings.
