Ingredients

    1 lb flank steak, marinated for fajitas.
    (Marinade: 1/4 light olive oil, 2 chipotle chiles (remove seeds if you like it less hot, 1-1/2 tsp salt, 6 green onion, chopped, 6 cloves of garlic. Blend this all together, poke holes in the meat, and put it and meat in a plastic bag from 1-4 hours.)
    1 red bell pepper, cut in half
    1 green bell, cut in half
    1 yellow or orange bell, cut in half
    1 sweet onion, cut into 1/2 rounds
    1 avocado
    rice pilaf with onion and green bell pepper
    cooked black beans
    5-6 11" flour tortillas
    sour cream

Directions

After marinating, grill the peppers, onion, and flank steak until done. (Steak should be 125-140 degrees F when done) Slice meat, bell peppers and assemble burrito: 3 oz meat, 3 strips of each bell pepper, 1/4 avocado, 1/4 C rice pilaf, 1/4 C black beans, onion to taste, 1 T sour cream. Roll up tortilla and enjoy!
