Ingredients

    The Batter:
    3/4 c flour
    3/4 c sugar
    1/4 tsp salt
    1/2 c butter, softened
    2 eggs
    2 Tbs lemon zest
    2 Tbs lemon juice

    The glaze:
    1 c powdered sugar
    4 Tbs lemon juice

Directions

In a bowl, beat the flour, sugar, salt and butter. in a separate bowl, whisk the eggs, lemon zest and lemon juice. add to flour mixture and beat until creamy. Pour into greased 8x8 pan. Bake at 350 degrees for 23-35 minutes. Cool completely before glazing.

    My recipe includes 8 tsp lemon zest in the glaze. Gives an extra lemon kick, but overwhelmed some people. :-) - 4/26/14
