Ingredients

1 lb cooked chicken breast, chopped
2 medium or 1 large Green bell peppers, chopped
1 large Tomato, chopped (with seeds)
1 large Cucumber, chopped
1 cup (dry) Whole wheat cous cous
1/2 cup Ken's Lite Sun Dried Tomato salad dressing
(or whatever vinagrette salad dressing you prefer)
1 cup Feta cheese, crumbled
Directions
Serving Size: Makes approximately 8 1-cup servings.
Because this is a salad, this recipe requires prep only. The only ingredients you need to cook are the chicken and the cous cous. I grilled my chicken, but you can bake, poach, or use leftover rotisserie.
1. Chop up chicken breasts, bell pepper, tomato, and cucumber. If you have a food processor, I'M JEALOUS!
2. Cook cous cous according to directions.
3. Once cous cous is done and cooled (takes only a couple of minutes), add all the ingredients, including the salad dressing and cheese.
4. You can eat immediately or let marinate in fridge. It tastes even better the next day!
