Introduction

This is a "half way" between one of Chocolate Covered Katies' blond brownie recipe and the original...my kids had NO IDEA there were beans in it! This is a "half way" between one of Chocolate Covered Katies' blond brownie recipe and the original...my kids had NO IDEA there were beans in it!
Number of Servings: 24

Ingredients

    1/4 c margarine
    1 c sugar (brown recommended)
    1 egg
    1/2 can cannellini beans (white kidney beans)
    1/2 c peanut butter
    2 tsp vanilla
    1/2 c whole wheat flour
    1/2 c white flour
    1 tsp baking powder
    1/2 tsp baking soda
    1 c oatmeal
    1/2 c butterscotch chips

Directions

Preheat oven to 350 degrees. In a food processor, thoroughly mash the beans. Add the margarine, sugar, egg, vanilla and peanut butter; beat well. Stir in flours, baking powder, baking soda, oatmeal and chips. Spread in a sprayed 9x13 pan. Bake for 20 minutes. Cut into 24 bars.

Serving Size: Makes 24 bars.
