Ingredients

    1 medium onion, sliced
    2 lemons, sliced thick
    1 1/2 lb boneless skinless chicken breasts
    1 tsp olive oil
    1 head of garlic, cloves separated and peeled
    2 sprigs fresh rosemary
    2 sprigs fresh thyme
    1/4 cup honey
    1/4 cup low sodium chicken broth
    2 Tbsp cornstarch
    1/4 cup water
    Salt & pepper, to taste

Directions

1. Place half of the onion and lemon slices in the bottom of the slow cooker.

2. Place the chicken in a large bowl and toss with 1 tsp olive oil. Sprinkle lightly with salt & pepper. Transfer to slow cooker.

3. Top the chicken with the rest of the onions and lemons and scatter the garlic cloves, rosemary, and thyme. Pour the chicken stock and honey over the top and cover.

4. Cook on LOW for 8 hours.

5. Transfer chicken breasts to a platter and keep warm. Remove the lemon slices, thyme, and rosemary and discard. Pour remaining sauce into a blender and pulse until smooth. Pour liquid into a small saucepan.

6. Bring the sauce to a boil over medium heat and reduce to a simmer. Mix the cornstarch and water together in a small bowl and whisk into the sauce, stirring constantly. Cook until thickened, 2 - 3 minutes.

7. Slice the chicken breasts and serve with the sauce.
