Ingredients

    1.3 lbs port tenderloin, in 1.5 inch cubes
    salt and pepper
    cooking oil
    4 oz beer
    1 large yellow onion
    3 Tbsp chili powder
    2 or 3 chiptole peppers in adobo sauce, chopped
    3 cloves garlic, chopped
    1 tsp oregano
    1 tsp coriander
    (optional 1 tsp cumin)

Directions

Season meat with salt and pepper and dust with flour. Heat the cooking oil in a skillet and brown the meat. Drain the fat and oil and transfer meat to slow cooker.

In large bowl combine beer, onions, chili powder, tomato sauce, chipotle peppers, gralic, dash of salt, oregano, coriander, and optional cumin. Mix well and pour over meat in slow cooker, mix again. Cover, cook on high heat 5-6 hours or on low heat 11-12 hours, or until meat is tender.

Can be served with whole wheat tortillas, rice, nonfat sourcream, cilantro, salsa, or reduced fat cheese as desired
