Introduction

I like these at room temp and I'm not tempted to put butter on them. They freeze well and I take out just one for breakfast with a cup of coffee. Keeps me full all morning due to the coconut oil. Ingredients

    1 cup Old Fashioned Oatmeal
    1 cup low fat buttermilk, plain yogurt or sour milk
    1/2 cup oatbran
    1/2 cup milled flax seed
    1/4 cup egg substitute
    1/8 cup melted coconut oil (or canola)
    1/4 cup brown sugar
    1/4 cup molasses (or agave)
    1 tsp baking powder
    1/2 tsp baking soda
    1 tsp ground cinnamon
    dash of salt

Tips

Can add dried fruit or other spices to change the taste. Ginger and nutmeg are good, too.


Directions

Soak oatmeal in buttermilk for an hour or over night. Add egg & oil, stir. Add other ingredients & stir just until moistened. Fill sprayed muffin tin 3/4 full. Bake at 400 for 18 minutes.
