Ingredients

    1/2 tsp Olive oil
    1 T onion, chopped
    1/8 cup tomato chopped
    1/4 c zucchini chopped
    1/4 c portebella mushroom chopped
    1tsp minced garlic (Spice World)
    1 tsp butter
    1/2 c egg betters
    1/4 c colby jack cheese, shredded
    1/4 wedge of avocado
    2 T Kirland Organic Salsa, optional

Directions

Saute veggies in olive oil. When soft, melt 1 tsp of butter in another pan and cook egg substitue, when set, add veggies, avocado and cheese and fold like an omlette. Top with salsa desired.

Serving Size: 1/2 of whole omlette
