Ingredients

    Pastry for 9-inch pie

    2 eggs
    1 can (1 pound) pumpkin (2 Cups) Or use fresh cooked pumpkin, cooled
    3/4 C brown sugar, packed
    1/2 tsp salt
    1 3/4 tsp pumpkin pie spice
    1 2/3 C evaporated milk or light cream


Directions

Heat oven to 425. Prepare pastry. Beat eggs slightly. Beat in remaining ingredients.
Pour into pastry-lined pie pan. Bake 15 minutes.
Reduce oven temperature to 350. Bake pie 45 min longer or until knife inserted in center comes out clean. Cool
