Ingredients

1 package of Konjac noodles (8.8oz)
2 chicken breast tenderloins
4 teaspoons reduced sodium soy sauce
2 teaspoons rice vinegar
1/2 teaspoon sesame oil
2 teaspoons cornstarch
2 gloves garlic, minced
3/4 cup fat free chicken broth
2 tablespoons + 1 teaspoon oyster sauce
3/4 teaspoon sugar
1 cup shaved carrot
1/2 cup green peas
1/2 cup chopped scallion
Tips
rinsing the noodles THOROUGHLY is important. Also be sure to keep stirring when bringing all ingredients together at the end. extra cornstarch can be added if you want thicker sauce. tofu noodles and chunks can also replace konjac or chicken in this recipe.
Directions
cook chicken then slice thinly. drain and thoroughly rinse konjac noodles. prepare marinade by whisking soy sauce, vinegar, sesame oil and cornstarch together. Place chicken and noodles in marinade and let rest for 20 minutes. Prep carrots and scallions. Mix broth, oyster sauce and sugar together and set aside. Spray pan with nonstick spray and saute garlic until fragrant. Add carrots, peas and scallions and heat through. Add chicken, noodle and marinade mixture to pan and heat through. Deglaze pan with broth sauce and heat until sauce thickens. Serve hot.
