Introduction
Delicious and refreshing Mexican shrimp cocktail! I usually eyeball the ingredients. These are my 'guesstimates'. Avocado and cucumber can be added or substituted for the jicama. Ingredients

1 lb. of shrimp, cooked ( I prefer small salad shrimp)
1/2 cup of diced onion
1 serrano pepper chopped (or more for more heat)
3 tbsp. of chopped cilantro
1/2 cup of chopped jícama
1 cup of tomato juice
2 tbsp. of ketchup ( i like reduced sugar)
1/4 cup of fresh lime juice
dash of Worcestershire sauce
dash of hot pepper sauce
salt and pepper to taste
optional: chopped avocado and/or cucumber
Directions
1. Mix shrimp onions, peppers, cilantro and jicama (or cucumber/avocado) in a non-reactive bowl and season with salt and pepper and some lime juice. (I love to use the small salad shrimp)
2. Meanwhile, combine the liquids and add to the shrimp mixture.
3. Add more tomato juice and lime juice if necessary and season again with hot sauce and salt and pepper to fit your taste.
4. Beautiful if served in a martini glass. Traditionally eaten with saltine crackers (although I prefer tostadas).
