Introduction

Ingredients

    pinch crushed red pepper flakes
    1 tsp garlic
    1 tbsp olive oil
    2 5.5 oz cans of V8 juice
    1 pint halved grape tomato
    2 6oz cans of drained light tuna in water
    1 tbsp lemon juice
    2 tbsp melted butter
    1 tbsp chopped basil (fresh)

Tips

Serve on shells or over brown rice. You can make this ahead and freeze it.


Directions

Saute red pepper and garlic in oil. Add V8 juice, increase heat to high and bring to boil.

Reduce heat to low, add tomato and cook 4 min. Stir in tuna, lemon juice, butter and basil.

Serve over pasta or brown rice.
