A quick and easy healthy version of chicken fajitas without the tortilla shells. This recipe is Paleo-friendly. A quick and easy healthy version of chicken fajitas without the tortilla shells. This recipe is Paleo-friendly.
Number of Servings: 2

Ingredients

    8 ounces Chicken Breast
    2 Large Red Peppers
    1 Large Red Onion
    2 tablespoons Olive Oil
    1/4 Cup Salsa
    10 Large Lettuce Leaves (for wrapping)

Directions

1. Add olive oil to pan on medium-high heat.
2. Add Chicken Breasts (about 8 ounces - 2 servings) and cook through.
3. Remove chicken and set aside to "set".
4. Add sliced peppers and sliced red onion. Saute until desired doneness.
5. Slice or diced chicken and add back to pan. Add desired amount of salsa.
6. Serve over bed of lettuce or wrap with large lettuce leaves.

Serving Size: Makes 2 servings, about 10 lettuce wraps
