Ingredients

85g flour (all-purpose; whole wheat would work, too ... and, perhaps, non-wheat flours)
1/2 cup "milk" (almond is good, as is coconut and soy, flavored or not)
2 tsp oil (I use olive, but canola is good, too)
2 tsp maple syrup (you could use agave or sugar, or, for a non-vegan option, honey)
1/2 tsp vanilla extract
1/4 tsp (or more!) cinnamon
1/2 tsp baking powder (or: 1/4 tsp baking soda and a splash of vinegar, e.g. apple cider)
Optional (but recommended!):
~ 1/2 cup blueberries or similar (not calculated in the recipe's nutritional information, but shown in the photograph)
Directions
0. Preheat your waffle iron.
1. Sift together flour, cinnamon, and salt.
2. Stir in "milk," and then oil, vanilla, and maple syrup. Let sit a few minutes.
3. Stir in baking powder (or stir in baking soda, then a splash of apple cider vinegar).
4. At this point you may wish to stir in about half a cup of berries or some chopped nuts. The sky is the limit!
5. Cook in your waffle iron, per your iron's instructions. If you add berries you may need to cook it longer to crisp up (about 4 minutes on my waffle iron)
Serving Size: makes 1 large waffle; cut into 2 for 2 servings.
