Ingredients

    2/3 cup + 2 T white flour
    1/3 cup wheat flour
    .5 T pumpkin pie spice
    .5 tsp cinnamon
    .5 tsp baking soda (add a little extra)
    .37 tsp salt
    1 stick butter
    1/3 cup brown sugar
    1 T white sugar
    2 T liquid egg substitute
    1 tsp vanilla
    1/2 of 15 oz can of pumpkin puree

Directions

Preheat oven to 350. grease an 8x8 pan with cooking spray. Cream butter & sugar; add egg and vanilla. Add pumpkin. Combine dry ingredients and add to wet. Mix just until combined. Try adding chocolate chips, almonds, or walnuts! Bake for 35-40 min.
