Ingredients

    1 cup (2 sticks) unsalted butter, softened
    1 cup granulated sugar
    1 cup packed brown sugar
    2 large eggs
    1 tsp vanilla extract
    2 cups all-purpose flour
    2 tsps baking powder
    1 tsp cinnamon
    1/2 tsp salt
    1/4 tsp nutmeg
    1 pkg (12 oz) semisweet chocolate morsels
    2 cups shredded coconut
    1-1/2 cups old-fashioned oats
    1-1/2 cups mixed jumbo raisins

Tips

This can be baked as a pan cookie, like "Toll House Pan Cookie", but adjust the cooking time.
If you have an upright mixer, I would use it, the arm work needed to do this by hand is pretty intense.


Directions

1. Heat oven to 350 degrees
2. In a large bowl, beat butter, granulated sugar and brown sugar on medium speed. Beat in eggs, one at a time. Beat in vanilla. On low speed, beat in flour, baking powder, cinnamon, salt and nutmeg.
3. Stir in chocolate morsels, coconut, oats and raisins. Drop batter by 1/4 cupfuls onto ungreased cookie sheets, about 2" apart.
4. Bake for 17-20 minutes, until golden brown.
