Ingredients

    1/2 lb tilapia filet (about 4 filets)
    1 Roma tomato
    1 tbsp dry rosemary
    1/4 cup parmesan asiago cheese blend
    6oz rotini pasta
    4 tbsp butter
    2 tbsp dry basil
    1tbsp minced garlic
    1/4 cup parmesean asiago cheese blend

Directions

Preheat oven to 400degF. Place tilapia filets in a 9X13 baking dish, sprinkle with rosemary. Slice tomato into 8 slices, place 2 slices on each filet. Bake 15-20 minutes until fish is moist but done.
While fish is baking boil noodles in a medium sauce pan, cook to package directions (normally boil 8-10 minutes) drain leaving in the collander. In sauce pan melt butter, add basil and garlic. Cook garlic in butter for 2 minutes on medium low heat. Add pasta and toss. sprinkle in cheese and toss. serves 2 at 2 filets each, or 4 at 1 filet each.

    Very Good
    I love the pesto for the noodles! It was a welcome change from the rice I always serve with fish. Next time I make it, I will mix some diced tomatoes in for some extra flavor. - 3/24/08
