Introduction

French toast is not inherently unhealthy; it's the butter and maple-flavored syrup we drown it in that's not so great. This version is simple: frothy egg whites and cinnamon, then a sprinkle of powdered sugar. Served with fresh berries and vanilla Greek yogurt, this version is light yet filling.

Number of Servings: 1

Ingredients

    1 slice whole wheat bread
    1 egg white
    1/4 teaspoon cinnamon
    1/4 teaspoon powdered sugar
    1/2 cup mixed berries
1 cup fat-free vanilla Greek yogurt

Tips

For French toast, choose the stalest bread you have in the house. Soft bread will soak up too much egg and get soggy.

Directions

Whip the egg white and cinnamon in a flat dish with a whisk or a fork until foamy.
Coat a nonstick skillet with cooking spray and place over medium-high heat. Dip both sides of the bread into the egg mixture and place in the pan. Cook for two minutes on each side.
Place on a plate, sprinkle with powdered sugar, and serve with yogurt and fruit.

Serving Size: Makes 1 serving, 1 slice of French toast, 1 cup yogurt, and 1/2 cup mixed fruit.

    Very Good
This was great, though I did miss the butter and syrup I normally put on my French Toast...thinking about adding just a tablespoon of cream cheese to it next time just for some added creaminess. - 8/29/12
