Ingredients

    3 Cans Coconut Milk
    3 Large Green Bell Peppers, Chopped
    4-5 Roma Tomatoes, Cut in Small Chunks
    1 Large Sweet Onion, Chopped
    1 6-oz Can Tomato Paste
    4-5 Red Potatoes, Skin On, Cut in Medium Chunks
    4-5 Boneless, Skinless Chicken Breasts, Cubed
    3 tbsp. Curry Powder
    1 tbsp. Garam Masala Seasoning

Directions

In a Blender or food processor, liquefy all ingredients except chicken and potatoes. Pour into slow cooker. Throw in the chicken and potatoes, and cook on high for 4-5 hours or low for 6-8 hours. Serve over rice.
