Introduction

Ingredients

    1 6 oz cans of tomato paste
    1 27 oz can of diced tomatoes
    2 15 oz can of Tomato Sauce
    1 onion finely chopped
    1 carrot grated
    5-6 cloves of garlic
    1/4 cup of Olive oil
    1 7 oz bottle of green olives with the liquid
    2 tbsp basil
    2 tbsp oregano
    1 tsp of marjoram
    2 tbsp of thyme
    dried pequin chile
    16 oz of 93% lean ground turkey

Directions

I like to use a slow cooker for this.

I also use a small onion chopper to chop the onion into very small pieces.

Grate the carrot(s) so that it cooks up into the sauce.

Brown the ground turkey in a skillet. Sprinkle with the cayenne pepper while browning.

Then add all the ingredients to the slow cooker and cook at med to high for 1-2 hours, then at low for 3-4 hours.

Many people add some sugar while making pasta sauce, but allowing it to cook for several hours eliminates the need. Also the grated carrot performs the same function as the sugar, but is healthier.

Serving Size: makes 12 servings of 1 cup each
